Ever since I picked up a custom Santoku knife in M390 and a Richmond Artifex in M390 I've been daydreaming about improving my kitchen cutlery. I have a new Santoku coming in and I wanted to see who's got what. Time to show off guys and gals :D

Not my pic but it is a Moritaka in Aogami super steel and I can't wait to use it!

Need to take pictures of mine but I have a 210mm Artifex in AEB-L that I love. Now I'm on the hunt for a great paring/petty.
 
I received the Moritaka today and it is pretty dang impressive for the cost. No over grind or wavy bevel to speak of! The edge was barely there but only a few minutes on the GlassStones solved that problem. This thing is thin and it slices through the hard stuff (yams and butternut squash) like nothing. Behind the edge was an impressive .004in. I can't wait to give a real workout this weekend!
