Am having a tough time putting a sharp edge on my SCHF3N. No prob on my SCHF9...Any suggestions?
 
The SCHF3N is 400 series stainless and the SCHF9 is 1095 carbon steel. 400 series stainless can be just about anything and is probably very soft. 1095 is far superior than 400 stainless and harder, thus enabling you to get a decent edge. You will probably never get a decent edge that lasts with the 400 metal.
