Shun Hana Limited Edition Chef's Knife was the 2015 Blade Show Kitchen Knife of the Year with an 8" Damascus steel (60-61 HRC) 71 alternating micro layers of VG10 and VG2 and a Tagayasan handle with CNC-lathed PakkaWood® accents, mirror-polished endcap. These are handcrafted in Japan. MSRP is $750 but I've seen them for $600 at Shun dealers.

That is a pretty knife. 600.00 is a lot of cheddar.
