Mr. Postman was kind to me today. I got 2 Santoku knives today. I got one from Ban (see it here) and this outstanding knife from Shun.
This is my seventh Shun and might just be my favorite so far. I used this knife tonight for dinner prep and it was nothing short of amazing. Out-of-box sharpness was impressive...hair splitting sharp.
So far this knife is very comfortable to me...it just feels good when using it. Thin VG-10 clad in SUS410/SUS431 Pattern Damascus. The handle is Pakkawood with a nice walnut finish.
I got this knife for about $100 and it is well worth it.
