Hello, I am upgrading from a 20 year old set of Cutco knives that a student of mine sold to me when he was starting out in sales. I do not regret buying them from him but they are not the best knives. My wife and I cook a lot. I am a much better cook than she is ("she who may not be questioned" may not agree with this, but I digress). It always drives me crazy when my knives are so dull. I just purchased a 8 piece set of Shun knives ( http://www.amazon.com/gp/product/B00022YL38/ref=ox_ya_oh_product ) plus a 7 inch hollow ground Shotuko Knife (on sale). I realize that there may be better individual choices out there, but I am fairly certain that these are good enough for us as we will just use the honing steel daily and send them back to Shun yearly for sharpening. My question is: what other Shun Classic knives do I need? As a point of reference, for supper last night I made crab legs and baked salmon, tonight I made smoked chicken, chebatta bread and clam chowder. I may be a knifehead some day, but with four kids and a career, I just need your opinion on what other knives I need to round out my new set. If I do not need anything else, that is cool, but if there is a "OMG, I could not live without that knife" item, I will add it my Amazon "saved" shopping cart and buy it as it come "on sale".
