SHUN VG-10 or SG2

hey guys,
i gave my mother a two-can a while back which she has found many a use for, but although she cooks all the time, she never has really had her hands on a quality set of knives, sure she has tried whustoff (spelling) and cutco, but i recently made her take a look at some of the shuns in a william sonoma and she wants one.

so we have settled on an 8" chef's knife, and while we are leaning towards the Classic series with the grantons in the blade. but while looking around i stumbled on the elite series in SG2.

now i don't own any VG-10 folders right now (ill get back to you all after my birthday raid on new graham) but i do own the blur and the JYD with SG2. as far as those who own or have used Shuns in the past (or their folders with similar blades for food prep) what are the benefits and drawbacks of each.

I don't know about SG2 but compared to s30v, AUS-10, ZDP-189, D2, Sandvik 13C26, 440C, and a few other steels I'm sure I'm forgetting I find VG-10 to be my favorite for being just all around solid. It has very good wear resistance, excellent corrosion resistance, sharpens easily, etc. Some other steels are better in some ways but overall, for me anyway, VG-10 wins out.

I do have some experience with the VG-10 versions.
I have a DM0702 Santoku, 2 of DM0716 Paring and a DMS200 Carving set.
I use the Santoku and Paring on a weekly basis.

I'm really happy with these knives. I was using Cutco and Forschner before
I got the Santoku (thanks again Thomas).
These blades far exceed what I was expecting.

I only have one minor itty bitty thing to date.
I always wash, rinse and dry my knives after use.
I forgot on Monday to dry it off and
came in Wednesday to find a little surface rust in a couple of places.
I actually just washed it again with a stiff sponge and
it disappeared. So I don't see it as a problem.
Since both steels are clad with SUS410, it might happen to the SG2 also. idunno

If you go the VG-10 route, you could actually get her more of them
for the same $$ compared to the SG2 line. :D

I do not have any of the SG2 models.
SG0404 is the SG2 model you speak of. SG2 with 2 layers of SUS410 SS.
I'm pretty sure the SG2 would be the same if not better than the VG-10.

Either way, I think your Mom will be very happy. :thumbup:

well i did a bit more research and newgraham doesn't carry the elite series so it looks like the classic 8inch with grantons will be heading her way after i head down there
