Sikayo Owners: Does Liquid Run in Between the Ultem Slabs?

This is for a use in a local sushi restaurant and the head chef was curious about satisfying NSF standards. For those of you with experience with the Sikayo, does the dual-sided adhesive tape and three Torx screws prevent the infiltration of liquid in between the slabs?
 
Have not had that occur but my use may not have been prolonged enough to see this happen. Why not sterilize daily if that is a worry?
 
If I understand correctly from all of the reading I did on VHB tape I believe it is waterproof even if stuff were to get to the edge of the tape itself?
 
I went with a Wilkins Mytuko Cobalt and a Mytuko Mini Cobalt for the kitchen staff to test out. The Sikayo will have to wait :(
 
My Sikayo , a gift to the wife ,has seen hard service for 3+ years, including dishwasher ( I told her I would hand wash it, and NOT to do that!)no sign of water invasion whatsoever.....
