As per request, I built this paring knife for a customer who wanted a gyuto style drop tip, and Red Heart to match his chef's knife.
.052" 52100 @ 62-63HRC
Normalized and thermal cycled
P50 Quench, down to 0°F, triple temper
.004" 28° edge, finished with Spyderco UF stone
It is unbelievably sharp!!! The grind is spot on, a full flat grind, with a very very slight convex above the edge bevel. You can't even make out the edge bevel in photos. This is a high performance paring knife, and I love making 'em! Thanks for looking!
