Two questions.
1) any clue what the turnaround time for an Edge Pro demo sharpening would be? And if there's any way to assuage my fears about losing my ZDP Leek (since it's my most expensive knife, and a limited run) in the mail?
I'd love to see just how sharp ZDP-189 can get in this package, but... it's my baby!
2) I remember there was a discussion of this recently, but I can't find it; I know what the advantages of interrupted or uninterrupted diamond hones, but I was wondering if anybody had any suggestions for which to get in X-Course (and probably fine, double-sided, just so my Sharpmaker won't have to make a huge jump in finish) for rebeveling? I'd love to take my Centofante 4 down to a flat saber grind.
