Single Edge (Chisel) Sharpening

This is def. a noob question... but on a single edge (such as my friends pocket knife or the knives in my jointer/planer)... How do I sharpen them? I have a wicked edge on order which I should get hopefully this week...
My assumption... start out like normal, form a burr... then keep going up the grits in stone however the entire time just on one side...
What do you do with the burr on the flat side? Strope it with leather after each stone? Strope it at the end? Nothing?

you would strop the burr off the flat side when you are done with all the stones. never use a stone on the flat side.
