I've used my SK-5 Trailmaster pretty hard, chopping different kinds of wood mostly, and I'm very impressed with how well it holds an edge. I dont have any experience with 1095 but from what I understand its a pretty basic tool steel, much like O-1. I would think they are all much of a muchness. Tough, sharpen easily, and will rust if neglected. How they are heat treated and ground will make the most difference at the end of the day.
