I want to get an idea of what other Sebenza owners prefer for the angle they sharpen their knives. I have had mine for a while now and it's only now that I'm thinking of touching it up. Do most of you keep it at the factory angle or do you reprofile it in any way?
I don't generally use it for fine slicing jobs so I was considering sharpening it to 40 to make a more "robust" edge.
What do you guys think?
