Small knife for cutting avocados?

Hi all,

Thanks for answering my question on avocado tools two weeks ago.

I came to learn that there are no tools better to cut avocados than using a sharp knife. Paring knife seems to be the preferred choice. I actually accidentally stabbed myself once using a paring knife. I wonder if a french knife is a better way forward...

To avoid injury, what is your knife of choice to safely dissect the avocado?

I typically use a chefs knife for most things, including avocados. Or at the smallest a petty knife on occasion.
I rarely use a paring knife anymore unless I'm removing skin from an apple or something similar.
 
By "French Knife" I assume you mean Couteau d'Office? Which is more or less a utility or petty knife - and longer than a paring knife.
With a longer knife you have less instinctive awareness of the location of the point. That won't help you at all.

The answer is just constant awareness. Or a knife that isn't so sharp - it doesn't take much to cut avocado flesh.
Alternatively, you can scoop out the flesh and cut on a board.
 
Any paring to petty knife is fine for avocados. Actually you can also do it with a chef's knife if you wanted.
One thing I'll point out is that Japanese knives with the blade heel sticking out allows you to stab the seed with it
and twist, making seed removal easy. I have a Wustoff paring knife which although ideal in size, has the European bolster
running down to the edge of the heel, making this little trick impossible. So I tend to use my Hiromoto petty for the job.
