So I was at my parents' house helping out with some cooking, and I noticed that the knives in the kitchen were all terrible. I've tried to get my mom to buy better kitchen knives before, but she really is stuck on this crappy Kitchenaid "Santoku". It's about 5.5" with a handle similar to the one here

Hopefully that link works. Anyways, she's a small lady, and wants a similar sized/style knife with about 5.5" blade and a small and comfortable handle. Basically, the ergonomics of the knife is what is important to her, but I'd like to buy her a quality knife. I'm familiar with folders, but fairly ignorant when it comes to the best brands and steels for kitchen cutlery.
So I really need some help! I want a small Santoku style knife with a <6" blade and a small, ergonomic handle. I'd like a fairly stainless steel that takes a good edge, but isn't too hard to touch up on a sharpmaker (maybe something like VG10). I'd also like to spend less than $100. So what are my options? Thanks in advance for the help!!
