smoked meat... what do you like

Hi everyone... I was doing some jerky the other day... using green alder chips (from an alder tree...not fromt he store) and a tripod design... like I show in my book.

As I was working the process... I commented to someone how much I like the taste of Alder smoked meat. I have used hickory in the past... but really do prefer the Alder.

I'd like to hear what others use... I hope there are others out there that smoke their meet the old fashion way.

I like smoked meat and fish with all the variations of woods. I have to admit that after living up here for so long that I've sort of gotten used to using alder, and that it leads in preference - probably because it gets used so much.
 
I like to marinate venison or Elk in chokecherry juice with a little brown sugar
and use hickory. only because that's about
the only good smoking wood I can get up here.
I know it isn't the old fashion way but I
would put in second place commercial made
jerky made in Montana "HI Country" beef jerky Made in Lincoln. It's the only commercial stuff that I'll eat

Smoked Eels! Yummy. Had an uncle that smoked them and they were great. Ahhh, memories...Thanx for helping me remember that!
 
Cherry and hickroy are two of the woods I use a lot.
