Carefully comparing with the steak knife the choil appears identical in size. The top appears to be basically a mil overrun with different handle, and the bottom blade a slightly shorter version. Please correct me if I'm wrong .

Mil overrun what? Theses are Elmax, not INFI.

Sorry I was unclear, I was referring to the AMS mil overrun which has much the same blade shape/grind. So, it's more like the steak knife with the AMS mil overrun grind than an AMS mil overrun with a steak knife handle.
