So how does one choose what metal to make a knife out of?

Saw a picture that would simplify my explanation so basically I want a simple thin blade to be used like the sayoc RAT.

However I want a different grip for a couple reasons the new stacatto stroup collaboration with the 90 degree hilt is very similar.

So what would I make a 3" with a hard angled tail out of?

Side question is there any metal that would do a good job I could shape entirely with stock removal and have hardened down the road, because if it takes me 8x to get the grip just right paying a knife maker that many times would be expensive.

Or what's the best material for a trainer to figure it out with before getting one made.
 
Practice handles carving wood, or sculpting clay.
You still will need accurate ways to measure, and transfer that info to 3D or paper.

The one steel that can do Everything is AEB-L, and it's cousins
