So in terms of grit, would a 3000 grit stone be equal to a 3000 grit sandpaper?

That link is a really good reference for learning about different grit ratings. It's not the whole story, but it's a great reference. If you're considering specific stones, or families of stones, or other abrasives, it might be smart to ask specifically about them. This stuff is way more complex than you would expect. The grit rating numbers, even when you link them up, via the chart above, do not tell you exactly how the abrasive will grind or what finish it will leave.

Two "stones" of the same grit can behave very differently....

Even edge-leading vs edge-trailing strokes on the same stone can give very different results....
 
A quick answer....no they are not even close. For example, when someone says, "I have a 3,000 grit stone", they are generally referring to the Japanese rating. When someone says, "I have 3000 grit sandpaper", they are referring to ANSI (I think it is ANSI....pretty sure). 3000 grit Japanese is about 1200 in our sandpaper rating. Hope that helps. I always like to refer to the micron rating if possible....that clears up most of the problems. Even then.....
