So, speaking of batoning

I used a thin cut Ratweiler to whittle up a bunch of cottontails the other day. My hands were too bloody to get a pic during the process but I did take one once everything was rinsed off and bagged up.

Okra and tomato recipe

Two slices bacon sliced into 1/2" pieces
1/2 large sweet onion diced
14 oz can of diced tomatoes
2 cups sliced okra
1/4 cup white wine
2 diced garlic cloves
1/4 tsp dried oregano
1/4 tsp dried basil
Salt and pepper to taste

Render bacon on medium low in a 4 quart sauce pot until crispy. Remove with a slotted spoon and set aside.
Sauté okra and onion in the bacon grease on medium for five minutes. Cooking the okra this way will remove the slime. Add the garlic, oregano and basil and cook for 30 seconds, stirring constantly. Add the wine to deglaze the pan. Reduce wine until it's gone, just a few minutes. Add tomatoes with the juice, bring to a simmer, cover and cook for five minutes. Add crispy bacon bits, salt and pepper to taste. I promise you'll love this.

I usually use a Chardonnay. Even BotaBox works good as a cooking wine.
 
I used to like okra. Now I am on a low oxalic acid diet after a kidney stone, meaning no more spinach, swiss chard, and most nuts. And low sodium diet for kidney function. Wow, is that hard. I think my Dr. hates me. :rolleyes:

Bacon ADDS to everything, but everything Subtracts from Bacon
Bacon definitely adds to jewelry. Never saw any that I liked till I saw this. Damn I Love Bacon

That okra/gumbo looks really looks good. Reminds me so much of the South and growing up there. I love the taste but hate the itch.:)
