Are there some soft spacer (inlay) sheets in metal to buy on the market? I have tried with copper and brass, but that´s difficult to work with because of the hardness.

Gold or silver.
I thought about something softer. In Norway we have something called silver-tin but that is only in silver color and I need to know if there also is soft metals like that in yellow or red metal color.

Have you tried annealing your brass and copper? Both (especially copper) are very soft when annealed.
Heat till just glowing red and quench in water.

Yeah you're not gonna get much softer than copper for a spacer metal that anyone would want on a knife(tin, zinc and lead not really viable choices). Not without going to pure silver or gold or a mix of those 2. If you're looking for softer, and with a yellow or gold hue, you're only option is a gold or gold mixture.

Nickle Silver is cheap and works well. (AKA - white brass , silver-tin, German silver, etc). It is a copper - nickel alloy with a little tin or zinc.

I use sterling silver most of the time.

All the non-ferrous metals (copper, brass, silver, gold) anneal by heating to a dull red color (just barely red) and dropping into room temp water. This softens them a lot.
