Some Elmax showed up for lunch today

Just getting ready sit down to lunch today and UPS put this on my door step.
It takes me an hour and a half to put two descriptive words together, so I'll take the short cut today and say it just feels right. Definitely going to be used a lot.
And thank you to Beef for the great edge - always happy when a blade shows up shaving sharp.


While I don't really need a knife to cut fish, I figured the plate might be a good back drop for it. Since I didn't make the beloved bacon, I did throw in that little gratuitous chunk of meat near the end of the knife at the edge of the plate (which does have bacon in it). My wife gave me these things called Epic for my birthday last week. They're packaged like an energy bar etc., except made of dried meats. This particular one is predominately bison, with some bacon, and cranberry - very tasty. I'll be getting more.


Something I could use the knife for at lunch. While my Murray Carter neck knife usually plays this role, this knife works very well and I think will be sharing the duty more often than not. A nice thin, slicey, Busse with a beautiful blade and handle. I'm very happy. Thanks for looking. Mike
 
Yes, I really like the handles also. Very comfortable. Doesn't seem like there would be any hot spots.
As for whether the handle is good for use as a peeling knife, I'm not sure I'm qualified to answer that. I can probably count the number of times I've peeled something on one hand. I simulated the peeling motion with an apple, both pushing away and peeling toward (blade facing thumb) and it felt fine - no awkwardness at all. I compared it to some of the smaller paring knives I have and it felt just as good - maybe even better because of the more full handle. The handle is substantial but not oversized in my opinion. It's about 0.71" to 0.72" thick. The balance point is about 0.7" back from the center of the front rivet. Hope all the verbiage helps a bit. Thanks. Mike

These steak knives are excellent meal companions. I stained mine a bit with use but some Mothers polish brought it right back to as new.

I finally got my hands on some Elmax yesterday, I really like this knife A LOT...... :)

Just holding this thing practically begs to be sliced with, perfect thickness and handle!

Congratulations aaaa-cccc! They are very nice and yours is a beauty.

The day after mine showed up, a Cutco representative came by to demonstrate their knives. I normally don't entertain sales demonstrations at my house but we are talking knives so I could not resist. Besides, the representative is a friend of my daughters. She had only been on the job for three weeks and only knew what Cutco had taught her (that Cutco knives are the best and 440A stainless is the best knife steel - little did she know she was talking to a knifeaholic). Anyway she was rather surprised when my Busse steak knife draw cut rope (they actually do bring rope to demo with) as well if not better as the serrated Cutco blade. Then I showed her that the Busse could easily push cut the rope. The Cutco - not so much. She put on a good demonstration, and I tried to add a bit of education where it could be helpful without being condescending. I bought a cheese knife and a spreader just to support her (college savings). Since Cutco does offer lifetime sharpening and or replacement and are functional, I think Cutco knives are OK for the non-knife, dishwasher cleaning, pile of knives in a drawer folks (or someone who just doesn't want to put much attention into their kitchen knives. They are very expensive for the materials used though. Congrats again. Mike
