Some help with sharpeners

Been using sand paper to sharpen all the knifes and axes. Well on one of the get toghers one of the guys put a wicked edge on my mora using stones its actualy nice and realy shiny still after 2 years.. I been thinking about trying stones or diamond plates. I realy like very sharp kitchen knifes and thats what i want to work on the most. How fine of a stone is realy needed. How would the diamond plates compare to the real stones??

The HF plates are okay and will work but they are not very fine and finished edge quality is not the best. I use mine as nagura stones for my fine waterstones, I have the individual plates though.

The plates sold by ragweed are EZ-lap and comparable quality to DMT.

I like my DMT products but for scandi grinds sandpaper or waterstones seem to work much better. Diamond hones really shine with harder and higher alloy metals, they are still effective and very fast with others but its a bit overkill sometimes. Check chefsknivestogo for a nice selection of stones, they have a 3pc waterstone set finishing at 6k that covers the bases very well.

Depends on how much you looking to spend though, it can get expensive..... especially if you buy wrong.
 
I bought the 2 sided Hewlett (600/1200) and a DMT (600) credit card sized sharpener from Ragnar earlier this year and they both work great for what they are intended. I used the Hewlett a couple of times at friends places and I pack the DMT in my wallet. They are ideal for the field.

For my knives at home I bought a thick piece of plate glass and taped 400 and 1500 grit wet/dry sand paper to it along with some thin cardboard with white rouge. Cost < $20.
 
Just one more Q if i may.. How much polish is or how little polish you want on the last stone?? Is 1200 is enough or do i want to go higher then this.. I would like to put the best edge on my kitchen knifes. For outdoors use i guess 1200 is plenty or am i wrong??? Scott thats great video time to see them all.

1200 is more than ok for outdoor. Even with the eze-lap, dmt hewlett, FINE you can still shave. I'd go with the hewlett plate from ragnar, awesome plate, double sided, monocrystaline diamonds.
