Been thinking a bit, and I am considering bringing out 3 kitchen knives, in O1 and 440C stainless. Also thinking about bringing back the old style handle Straight Back Kephart.
 
I have a few old patterns, a paring knife, utility knife, and small chefs knife.
 
The kephart sounds like an awesome idea, also I know they take a lot more care but I prefer kitchen knives in high carbon steels.
 
Still on the hunt for the perfect (read - make my wife happy) paring knife.
Must have a wooden handle + a few other particulars. :confused:
 
Are these still a possibility? Stainless would be great, might blowout the price curve though? A reasonably priced stainless paring knife would be VERY use full!

Whenever I get extra money in the account I plan on doing some stainless paring and Bird & Trout knives.
