Sorel caribou wool or synthetic?

Not sure what the difference is for they are both rated for the same temp. Would one be better for sweaty feet over another or would one be better for washing and care? I am think wool but would it be itchy as well? I typically would be wearing a merino wool sock as well...a blend.
