Source for 1/16

Gentlemen,

I'm doing a couple of kitchen knives for a friend of mine, and I'm looking for a source for 1/16th steel in 1070, 1080, or 1084 steel. I've found some 1095 at an online vendor, but the heat treat is a little finicky for my current HT setup. Any sources I can be made aware of?

Also, is it reasonable that a carbon steel blade like this could be kept rust-free if well cared for and maintained, or should I go ahead and suggest it be patina'd?

Why not use 15N20,basicly it's 1080 w/nickle and easy to find in 1/16" which is .063.
Carbon steel can be kept rust free with proper care but using it in the kitchen it's gonna patina on its own.
How much do you need?

And nickle won't negatively affect its edge holding properties? If not, then that's an excellent idea and I'll look around!

For my current purposes I'm only looking for 18" or so, maybe two feet. Also at least 1.25" wide to make a nice wide kitchen utility knife. If I like the results then I'm sure I'll do some more, that's just a starting point for me. Thanks!
 
15N20 will make a great knife on its own.The nickle won't hurt a bit.
