I would say that brass or copper would be the best compliments to the sort of classic look you're talking about. If you want to be bold, you could try a rich green of some kind.
 
I think black micarta is pretty cool on lighter iron woods. Not enough contrast with many walnuts though. If you want pop orange and walnut go together pretty well too. Is it Iron wood or walnut? Or both on the knife?
