for those of you that thought i was dead, or lost. I just wanted to let you know that i'm still around from time to time, lurking and occasionally making a knife or two.

spending most of my life in commercial kitchens, i always hated the poorly designed kitchen knives, from henckels (though their new high end line looks to have solved all of the design flaws in previous models, sans steel choice) to dexter sani safes. Strangely enough i never ventured in to making kitchen knives.

i've been doing a lot of flat grinding lately (yes i've seen the light) so i wanted to make something that looked good and would work great in the kitchen. this is what i came up with. let me know what you call think

10" overall of 1/8" thick full flat ground 1095. dressing in white bone and black liners with stainless pins.

looks near 3 inch tall at the heel
nice looking blade and im sure it works great as the grind looks fairly thin (tho you have been cooking so you know how great a nice well made knife works)
 
just entered this thread for the first time- THAT THING IS BAD ASS!!!

I've sometimes entertained the thought that when people get attacked with a knife, there is a overwhelming probability that it will be a kitchen knife, not some sleek and deadly 'fighting' knife, or some scary 'switchblade'.

This kitchen knife looks HUNGRY FOR BLOOD- (but while you're at it could you please dice this onion? They make my eyes water something fierce...)

i have always been told that the kitchen knife is the most used knife in assaults since every house has one and not every one has a cool pocket knife or gun
 
I have a long culinary background and that's one of the best designs I've seen in a while. I'm pretty sure that you should send it to me for evaluation. But seriously...how much would you charge for one?

maybe i'll slap one together and do a pass around with the next one. maybe something a little more utilitarian with stainless and micarta?

That looks like a beast!! A nice one.
I'm not sure about it... how 'bout you send it to me. I test it and send it back in a few years.
I'll bet it's great in the kitchen.
