Hello,
I just visited my favorite "cuchilleria" to look for a traditional, elegant, spanish navaja in carbon steel...
I had bad luck, everything they had is stainless, but at least I bought a traditional sheppard knife.
These knifes are used by the goat or sheep sheppards, so they're called "pastora" or "cabrerita".
bladelenght: 11cm carbon steel
total lenght opened: 25cm

a really rugged simple design, not a beauty, but usefull, and just for 13€ :)

Another nice example of a simple, working man's pattern. Makes me think of a paring knife for the pocket. Just the thing for a fellow who may have to do a number of cutting tasks throughout the day, prepare his meal, and cut his cheese, all in a days work.

A guy could build quite a collection of knives just collecting simple, working knives from around the world. And the prices wouldn't be too hard on you either.

What simple and beautifull lines that knife has!

The older I get, the more I'm attracted to the simple old style working mans folder like that shepard knife, sodbusters, Douk-Douks, and Opinels.

That knife looks like it would be right at home on the tailboard of a wagon in some high pasture, cutting some bread and cheese to go with that wine in the bota.

Amos Iron Wolf, that's exactly what I'm collecting, traditional, every day working knifes in carbon steel.
This pattern is typical for the "la mancha" region, from Santa Cruz de Mudela.

Jackknife, this knife gets as sharp as my 12 opinel, the blade has just 2mm thickness. nicely balanced, strong backspring and only a little heavier than opinel.

It's used by the sheppards to butcher goats, cut and clean hoofs, eat..

YES, I'm using it :)
after slicing yesterday some onions, potatoes and fruit, now it has a nice patina.

When you'll visit spain, you'll find these knifes in nearly every hardware shop, they're really common.

Man, that's my kind of knife! Simple, well designed, traditional, and made to get the job done for a working man. That's great!
