I was just reminded to ask everybody if they have had any experince with Cold Steel's kitchen knives?
 
A friend of mine bought some a few years ago and they cut very well. I didn't like the small handles, but I heard that they have corrected that. However, if you want some great kitchen knives, check out Murray Carter's work. His customs are reasonable and his semi-custom Muteki line is a good deal. His website has been cited in some archived threads but I don't have it handy.
 
I just posted about them in the other thread. Here's the short version:

They slice GREAT. I bought one for my mother 2 or so years ago, and the only edge maintenance needed was 3 steelings on the back of the blade to realign the teeth at the very tip. Lansky makes a CS serration pattern sharpener now too, which should be a great tool. I liek the CS blades because they are thin, and coupled with their serration pattern, these knives will slice all day and ask for seconds. They saw through frozen stuff quite well too. For the price, CS kitchen knives are great, especially now that Lansky has a sharpener out there.
 
I have bought two different K7's at different times. I bent the first one when I forgot it was in a pizza box and folded the box in half so that i could fit in the garbage. The tip had already broken off before this happened, it was fragile. I then ordered a new one with the different handle. It felt better and was in fact larger with more tread on the handle. The tip broke off this one as well. Both of the knives are hard to sharpen back to the original factory edge. Overall they were good, but I think that the Spyderco's are better. I personally am going to invest in some quality kitchen cutlery without serrations, so I will see how they compare to the Cold Steel knives.
