I don't really want to open this box, but I do have some very specific criteria. I need recomendatioons for a stainless steel to be used in a leather parring knife.
Fist a desciption of the knife. I attached a photo of one I made out of o-1. The primary bevel is very acute, maybe 10 to 15 degrees, with a small secondary bevel of about 20.
Second, what it needs to do. It needs to cut leather useing a pushing motion. The edge needs to be able to be as smooth as possible with no serrations (even micro). Yes I know that there are always some at the microscopic level. It needs to hold that very fine edge for as long as possible.
Third, possible concerns I have (may or may not be founded in reality) stemming from my limited experience with stainless. Can the edge be touched up with a strop? Is it possible that the carbides in a high alloy stainless can interfere with a highly pollished edge?
So if anyone followed any of that do you have any suggestions? I also need to be able to get it in 1 1/4 x 3/32.
