Speed sharpening ...

I like to have the water wheel + coarse + base stones & Japanese comprehension to go, please. Cool video. I wonder how that speed sharpening fare in dealing with high alloy knives (m390, s30v, s90v, etc..).
 
I've yet to see a video of a master Japanese sharpener go slow when sharpening. They all go at it like a bat outta hell. Maybe, they're onto something I don't know.

I get to see a LOT of Japanese sharpeners (it's easy to do when one lives in Japan, right?) And NONE of them do half the things I see suggested here in BladeFormums. They do, however, put out some amazing edges! The speed that the street sharpeners move at, to finish all the housewives' knives would wear me out in 30 minutes! But still, the finished edges are just about as good as I get with an EdgePro!

I think I've seen Murray Carter go about that fast before too.

Never really seen myself going to know, but I've also gotten pretty "into" it when reprofiling a blade.
