I agree with Paul, but on the other hand, a deli slicer is kind of a flattened bell skiver 😁
 
I believe that would be incredibly dangerous to even try. Meat is pushed over the blade and it is thick enough to prevent any contact with hands or fingers. There might be a way to try to hold the leather flat without body parts in the way but, even so, trying to get any kind uniformity will be difficult to impossible.
