Wich knife is the best EDC choice the Centofante III or Delica 4 ?
What does differences in shape of the blade has to do with the cutting ability.
and does the difference in blade thickness matters anything ?

thanks:)

Impossible question, without knowing what you expect to do with your EDC. And the blade thickness obviously matters: it affects durability and cutting performance, and weight of course. The Centofante 3 has an extremely thin tip. It will break very easily indeed if you use it for anything except light cutting. The Centofante 3 cuts well with the thin blade, so it's a good EDC choice for those who a) like folders and b) don't expect to do any hard work with their EDC. Abusive stuff like prying is right out with the Centofante 3. It's a good folder, though. The Delica 4 is more robust if you intend to rough things up, but it's still a folder...

If you plan to use a knfie as a knife and cut things and like really good cutting ability choose the Centofante III. Its a sleeper of a knife and is very comfortable.

If you want a slightly heavier knife that has a thicker blade and is less of a better cutter get the Delica 4. Also, the Delica 4 has a thicker tip (which I don't like).

If you behave and use a knife for what it was intended the Centofante III (or 4) can hardly be beat.

I prefer the Centofante III and given what you said you would likely do with it, it seems like a good choice for you as well. The Delica is going to be a little bit more substantial, but I think the Centofante will probably slice a little better due to the thinner blade.

You really can't go wrong with either though.

using the knife for food, opening boxes, envelopes and small stuff like that.

For that stuff, I'd go with the Centofante 3. It can really cut, and it also makes a decent dress knife with the rather friendly non-tactical look.

Delica for a tougher knife. The difference in thickness is a half a millimeter. The Centofante has 1 liner for tip-up or tip-down carry on one side.

Personally, I like tougher knives better, and between the two, that knife is the Delica.
