I've mentioned this knife a couple of times, and somebody asked to see a picture. It hasn't been in the catalog for a few years now.

It's a 5 1/2" blade, thin stock very sharp. Micarta handle. You may notice that the steel is stain resistant, but not stain proof. I suspect that either that chicken about to become poultry or your vegies would have trouble telling the difference between it an a Santoku.

The steel was different than the Santoku. MRS-30 has 1.15 carbon. Very nice stuff. Don't think we made more than 1,000 pcs.

I must have put mine away damp in the kydex blade cover I had made for it, and I cleaned up a little bit of rust before I scanned it.

MRS30?
1.15% carbon?
Should it be considered an almost-stainless or a "tool steel"?

Think there's demand again for a thousand or so kitchen knives for purists? That chicken nemesis, of course, and a couple of more conventional shapes - 4" paring & 8" chef's maybe - with the linen micarta handles? Preferably epoxied to keep the moisture out from under the tang.

MRS-30 is a stainless steel. Chrome is above 14%. Don't remember the exact amount though. Lotsa chrome, large secondary carbides at the edge limited how thin the knife could be at the edge. 1/10 of a mm was the requirement. We're working on some kitchen knives. Slowly though.
