Sorry to sway from the 3 choices, but The Spyderco Stretch in VG10 will come in at your budget if you look around, and the blade shape is a derivation of the original Wegner hunter made for skinning and field dressing, while also being proficient at all sorts of cutting tasks. However, if I had to choose 1 of the 3 you metioned, I would go with the Utilitac. I don't like assisted blades for any application where blood may get into the mechanism (Blur) and the Delica is just not my style for game.
From the 2014 Product Guide:
The Stretch is a highly evolved folder that traces
its roots back to the classic Spyderco Hunter
and Pro-Venator models. Ideal for
outdoor applications and all other cutting
chores, it features an injection-molded
FRN handle with Bi-Directional Texturing™, a
wide profile, and an ergonomic shape that brackets
the hand to provide an amazingly secure grip. Its
skeletonized stainless steel liners and sturdy back
lock mechanism guarantee superior strength and a
four-position clothing clip offers ambidextrous tip-up
and tip-down carry. The Stretch’s drop-point blade
is full-flat ground for remarkable edge geometry and
low-friction cutting performance. It is available with
VG-10 or ZDP-189 ultra-high-carbon blade steel
Old School Wegner
Stretch (I like the handle shape better than the original because of the jimped forward finger choil at underside for a nice choke up)
