Spyderco Delica 4, Utilitac 2, or Kershaw blur

Which of the knives listed above do y'all believe will be best for EDC and perform skinning, field dressing deer and other game nothing bigger than white tails. So it should be decently strong and easy to sharpen.

Also I'm staying under 75$ and want a knife with a 3" plus blade

For skinning I would go with the Blur, PE recurve blade. It has a long sweeping recurve blade with a nice belly. It will be easy to work if you are capeing for example.

I have skinned a couple hogs with a Kershaw Shuffle and for around $15 it is an awesome skinning knife. It might be too small for a deer but, it is great for smaller game and predators.
 
If you want a 3+" blade, you might look at the Endura instead of the Delica. I like the Delica a lot more than the Endura, but it is a shorter blade (~2.5").

I've never handled a Utilitac. Between the Blur and Delica, I like the Blur more, but the Delica gets more usage (smaller and a bit easier to carry for EDC).

There's a Delica and Blur in this pic. The Utilitac (according to Ontario's site) has the same length blade as the RAT-1, but the handle is about 1/2" shorter. So, it'd be about the same size as the Blur or Large Griptilian.

Well, the Delica is only 2.88". But you can step up to the Endura 3.75" and still be under $75.

I prefer the Delica for EDC but I'd rather have the Endura for something as large as a deer.

I would recommend you get 2 blades, a Delica for EDC and a dedicated skinner like a Buck Bucklite Max and still be under $75.

I have a Spyder in my pocket right now. Both great knives but if I had to chose.......Blur..... GREAT warranty and CS.
 
Sorry to sway from the 3 choices, but The Spyderco Stretch in VG10 will come in at your budget if you look around, and the blade shape is a derivation of the original Wegner hunter made for skinning and field dressing, while also being proficient at all sorts of cutting tasks. However, if I had to choose 1 of the 3 you metioned, I would go with the Utilitac. I don't like assisted blades for any application where blood may get into the mechanism (Blur) and the Delica is just not my style for game.

I think the recurve of the blur would be best for skining and the delica would be a better edc choice. The stretch mentioned by GlockandBalls ( hilarious name btw ) would be the best for both edc and skining
