Does anyone have and use one of these? How do they compare to Henckels and Forschener knives(price and performance).?All input is welcome.

I didn't know Spyderco made kitchen knives, so I googled it and checked out some photos. They have a few nice looking ones, but most of 'em don't look much different than Faberware. LOL

I have an original Santoku, a 6 inch utility and a couple of paring knives. As I understand it they are bring the entire original line back, the only difference being the handle material.

The ones I have work pretty well for being as thin as they are. They stay sharp fairly well if you don't hit anything substantial with them (like a bone). The Santoku is a veggie slicing fool. The utility would make a nice slicer if it was 2 or 3 inches longer & the paring knives are strictly knife-in-hand affairs.

I'll look the new offerings over & may pick up one or two and use them as "guest" knives so my better knives don't get abused by well meaning friends.

I have the Spyderco 6 inch Santoku, bought about 10 years ago I think.
Very thin blade, easy to sharpen on spyderco triangle sticks.
Find it very very soft steel. Like the other poster said, it is a decent veggy slicer, but don't hit anything hard. I just ordered a Shun classic, which I hope will be a big improvement.
May be spyderco improved the blade steel on their reintroduced kitchen knife line. Spyderco does not seem afraid introducing many interesting steels into their knife line.
Yes, the Henckels is a much better blade then my old Spyderco.
