Spyderco kitchen models

So my my dad owns and runs his own restaurant. He asked me knowing I’m a knife nut what kitchen knifes he should get.(also mentioned he wants it to be serrated.) My first thought was Spyderco does kitchen knives and has a awesome serration pattern. So after looking we decided on the kitchen utility knife k04sbk and it’s smaller version ko5pbk. And out of the box were great and thought these were the end all be all kitchen knives. After a couple of weeks and abuse of a kitchen they are still fairly sharp but of course have dings. Now though they are starting to develop rust spots after being washed and dried and for the most part wipe off with some mild putting. So all this to say can we get a h1 steel kitchen knife? I mean it would be amazing with serrated edge and from my understanding still the best serrated performing steel out there. I know it might not be a huge seller but I feel like Spyderco is the company that if they are going to do something they would do it right. Personally I feel this is a no brainer.

No idea on if/when they'll reach prodution, but Sal has mentioned that they're working on some new kitchen knife designs and that LC200N would be considered as a rustproof steel option.
 
I have the same Spyderco knives as my “cheap” kitchen knives I use for most kitchen tasks. I’ve been using them for 3 years and don’t have any rust on my blades. Great knives for the money in my opinion. I also have a more expensive Miyabi that I use for slicing and chopping vegetables.

A LC200N 6-8” premium chef knife would be excellent if they could sell it for less than $135
