I am in culinary school, and need to get a tourne knife, you know one of those birds beak parers. I cannot tell by looking at the pictures of the Spyderco 2 1/2 parer if it is a semiwarnecliffe, or a birds beak. I suppose I could dremil it to the contour I want and then turn loose my 204, for a $20.00 knife, and I would rather give Sal the business than anyone else.

If it is not the birds beak profile, has anyone successfully made tourneed potatoes, beets, or carrots with it?

Any help would be appreciated.

It's a very slight hawkbill -- sounds like it's just what you're looking for. Great little knife whether you're in culinary school or not. Comes wickedly sharp with a very acute edge that sharpens very nicely with the Sharpmaker stones in the 30 degree slots.
