If the factory bevel on the knife suits your needs, just set the rods on the Sharpmaker to be the closest, then adjust the angle you hold the knife at so that you are matching the bevel exactly.
 
You'll probably get a lot of varying answers to that.
I myself am hard-wired to sharpen at an angle to the stone of 12.5 degrees, resulting in an included angle of 25 degrees. A manufacturer used to say, "20 degrees between blade and stone", but I still think that's crazy. A 40 degree included angle is what Sir Richard Francis Burton recommended for a saber that's going to be used for whacking green skulls.
 
If it is hardworking knife and you want the edge to last a while use the 20 degree per side setting. If you want to shave hair off your arms, slice paper into shreds, and generally show off then use the 15 degree per side setting.

I use the 15 degree per side setting.
 
I have an old 1950's/1960's Case sharpening guide. (From when freehand sharpening was all there was, at any rate) It recommends 10 degrees per side.
(20 degrees inclusive)

Reprofiling on the SM is a pain, so I'd use the one that works. Probably the 40. Normally I reprofile to 10 dps and use the 30 on the SM to maintain a microbevel. But softer knives will have edge rolling problems if you do that.
