Over the years I have used various tools for sharpening knives. I've used the Arkansas Stones, diamond stones, Lansky sharpening system, various handheld devices and a Chef's Choice electric sharpener. I am by no means an expert at blade sharpening. I have decent amount of knives and I like to keep them sharp. Using the stones is tough because I can't seem to maintain the proper angle and it takes too long. Same with the diamond hones. The small handheld devices are next to useless (for me anyway). The Lanskly system works but it it too time consuming and I didn't always get repeatable results. The Chef's Choice electric sharpener works pretty good, but you have to be very careful with controlling the blade. I slipped a little on a couple of my knives and put some ugly grind marks on the blade. I wouldn't use this on expensive knives. Great for beater knives and kitchen knives though. Then I purchased some Spyderco knives and decided to try their Spyderdo Triangle Sharpening system. Comes with a DVD and written instructions. I sharpened 18 knives in about an hour...all to hair shaving sharp...scary sharp! All the hair on my left arm is gone, I have nicks on several fingers. The Spyderco Sharpener works, really well too. If you're not that great at sharpening knives, you might want to try this one.
