Edge-holding will be a property of the blade steel itself (hardness & wear-resistance). So long as the edge created is free of burrs (weakened steel), it shouldn't matter which tool the edge was created on, assuming the edge angle is similar.
The SM can indeed create some great edges, and the V-crock style setup is probably the simplest means by which to maintain decent or even great edges. It's main disadvantage will be in it's lack of aggressive grinding capability for re-bevelling and similar work, due to limited abrasive options and small abrasive surface area. As a maintenance tool, however, it's very handy and works well.
