For sale is a Spyderco Temperance Fixed Blade that I have used in the kitchen, but have not carried. Has some scuffs on the blade from cutting up whole chicken (which it does with ease), but these are just cosmetic. Edge is as sharp as when I bought it, maybe sharper. This model was discontinued a while back.
Can't describe it much better than Spyderco:
From Spyderco comes this tough, medium-sized outdoor knife for camp, utility and hunting (the designer uses his in the kitchen as well). The thick, wide and substantial blade is VG-10 steel that is double flat-ground and stamped in a versatile spear-point pattern. A textured spine cusp and coil on the blade, position both thumb and index finger for advantageous control on the handle.
