Spyderco triangle sharpener for Shun Santoku Classic?

I have a Shun Santoku Classic coming in this week together with a Shun sharpening steel, part ribbed part smooth.
I will use the steel to maintain the edge. May I assume that stropping is OK for this knife?

One day I may have to redo the edge. Question is what tool to use for this laminate blade?
Can I use the Spyderco triangle sharpener for this type of blade?

Can anyone tell me what the edge-angle of this knife is?

Any other suggestions for maintaining and redoing the edge?

You need to figure out the edge angle, but I'm going to guess it is less than a sharpmakers 30. You can use a sharpmaker to touch up the edge so you can skip the steel. One or two very light passes, done. Steeling looks easy but you can screw up your edge fast too.

Why didn't you get a mans kitchen knife? The Gyuto! A Santoku is really something for the wife. It's the Japanese houswife shape.

See, now you need to buy another shun. And a small paring knife Shun too. :) ;)
 
You can use the Sharpmaker. Use the 40 degree slot, as the factory edge will be somewhere between the 30 - 40 inclusive range.

Stropping will help extend the time between touching up on the Sharpmaker. At some point you will want to thin it out behind the edge and I'd recommend lowering the edge angle so that you can use the 30 degree slot on the Sharpmaker when you get around to it.
 
Any desire for free hand sharpening? 15 degrees per side is about stock, it'll go faster on a nice combo stone.
