Spyderco VS Ganzo ( Factory VS Factory )

I just happen to test them at the same sitting !
So here we are :
Factory edge VS Factory edge !

Do you want to know ?

Lets start with the underdog , Ganzo .
Actually , I'm not so sure Ganzo is the underdog anymore ..
Factory edge rolled out some 400 slices . That's rather good for 8cr14mov ..

I guess that means the SPY27 is going to ........................................ roll @ fifty slices !
No , you read right , a fifty roller .
Well , it is a factory edge after all and sometimes factory edges kind of fail to impress ..

Anyways , I wanted to get the factory edge tests out of the way since we have had so much bad weather !
U'll be seeing more of each knife as I re sharpen and test them some more .

I have three Ganzo all in D2 and ball bearing flippers. As good a knife as any I've seen and very inexpensive.

Spyderco is a sweetheart brand here on BF , for many good reasons .

Ganzo is the favorite whipping boy , taking the heat for all the copy ( and actual counterfeit , which they are NOT ) knives in the world .

They deserve some ire , but nothing like the fuss made here , compared to the zillions of true counterfeits with false branding .

Ganzo quality is OK for their price , IMO .

It's the knife snob version of those blind tests on a $20 bottle of wine versus a $2000 bottle of wine - most people can't tell the difference.

Guided knife sharpening :

Spy27Derco had one side at around 17/ 18 degrees and the other ? Much tighter
Ganzo ? looks to be around 14 degrees for the factory bevel .. ( 14 ) That's a tight bevel from the factory .

HRC:
Spy27Derco - 60 / 55 ( 60HRC file bites & 55HRC file skates )
Ganzo - 55HRC file only just , just bites ..

From this point the knives will go their own way ( tested individually )
