How does vg10 compare to s30v? The steel is the most difficult decision on buying a knife to me because I'm never sure about hardness or sharpen-ability.

All blades are like that but bare in mind a serrated edge is harder to sharpen

I have the PE Pacific Salt, at first it doesn't hold an edge very long, but after the first few sharpenings it holds the edge well.
 
The Translucent Manix 2 uses BD-1 steel, which has terrific rust resistance. You may have to touch it up a little more frequently than S30V, but it gets scary sharp in literally just a few strokes.

Truth be told. Both are very fine steels. S30V is more wear resistant so the steel will take slightly longer time to sharpen then VG10. Some say it is harder to sharpen but IMO no steel is hard to sharpen, they become only more time consuming to sharpen, but the results are great ones one finishes.
 
So it getting stronger as time goes on is true? If you could make a figure about how good does it go from? like 1 day of medium use when you first get it to get dull to 3 days of medium use after you've had it or some sort of scale like that?

It dulls pretty quick at first, I don't have a time frame, but after the first 3 or 4 sharpenings the amount of time between sharpenings increases. i don't have specific figures.
 
Serrated h1 has been tested up to 68rc at the edge, plain edge is much softer because of the comparatively minimal grinding required on a plain edge vs a serrated edge. VG10 is going to have greater rust resistance than s30v (although both are quite rust resistant) and will also take a much keener edge much faster than s30v. S30v will hold a "working edge" much longer than vg10 or plain edge h1 but loses its razor edge quite quickly. If you choose either vg10 or s30v over h1 try to stick with satin finishes or coated blades as bead blasted and stone washed finishes tend to pit and rust faster.
