I notice that the SpydieChef is selling for $234.50 at your local online retailer. I could be wrong, but that seems like a good price on these. Or do they normally sell at this price? I like the knife, but I don't know if I can go for a frame lock.

Question: Is the back completely open on these? DLT says it is, but they don't give a picture showing it.

Yes the Spydiechef has flow-through construction. The only connection points between the scales are the pivot pin, stop pin and three standoffs.
