Can someone please tell me the difference between the two steels? Cold Steel knives used to use the carbonV and now use the SR-5, whick is better? What are the advantages?
If both tempered to a hardness of 58, SR5 (a Chinese made steel) will likely be slightly tougher. CarbonV (1095CV, blah blah blah, pick a name), an American made steel, will likely hold an edge slightly better.
SK-5 is a Japanese steel similar to American 1080. Both are excellent steels, and I highly doubt you will be able to tell a difference between the two.
