Im considering getting an SRK for use at work. I have to choose between the SK5 and VG10 San Mai. I see a lot of comments about the SK5 and nothing about the VG10. Does anyone have any experiences with VG10?

To preface this, it REALLY depends on what kind of work you're needing to do with it. It's exactly as you'd expect, the SK-5 is the "budget" steel, the San Mai is the "middle of the road" steel and the 3V is the high end steel, prices reflecting that. The San Mai is miles better than the SK-5 and the 3V is miles better than the San Mai. If you're going to be really hard on it and require it to be sharp each day, budget for the 3V model. The SK-5 and San Mai will need to be sharpened more often.

I work in construction and farm industries.
