Although I've owned SS-handled Delicas in the past (with AUS-6 blades), I got a PE SS Delica 4 and must say I love it. For me, it's the perfect incarnation of the SS Delica. I prefer the saber hollow grind way over the flat saber grind on the regular D4s. IMO, it has a great balance of slicing ability over the flat saber grind, but more strength than the FFG D4. I like the thinness and heft, and that it clips solidly but doesn't shred pockets, at least not as readily. The SS Spydies are the only clip knives I'll still carry clipped; their weight practically dictates clip carry. I also like the subtley reinforced tip, which is still quite pointy.

I'm not sure how much love there is on the forums for the all-SS models, including the D4, but they remain among my favorites. The "slippery" handle really doesn't bother me, and neither do the 4-way clip holes, though I don't plan on changing the clip position.

I've never had an SS Delica, but I briefly handled a Titanium Delica before gifting it, along with having an SS Police. I completely agree that metal handles make the knives, because otherwise, I have to go carbon fiber. :)

It is impossible to go wrong with a Delica with any handle. The stainless is pretty nice. I would prefer it with FFG though, but that is me.

I have a brown FFG Delica, but only use it rarely. I like the cutting power of the FFG, but for some reason I like the saber hollow grind of the SS version better. I really like FFG in the Military and PM2, though.
