Curious if anybody has had their knives shift due to humidity changes? Have had some stag knives change position (blade centers, then off center then center etc) from the stag expanding and contracting. Thanks guys.

Yes. I have two small Buck folders handled in stag, purchased back in the early '90s, when I lived in Central Texas. I was down there for 20 years, with no issues. About 3 years ago, I moved to New Mexico (much drier here). When rummaging through some of my knife storage, I took both out and noticed the stag had curled and lifted away from the liners a bit. I never anticipated seeing that, after having those knives for so long with no issues.

At least a couple of times a year I treat my stag with lemon oil. I wonder if regular oiling would keep this from happening?

Lemon oil, I presume that works well?

Also that is serves as a pleasant smelling stag-saver? :D

Very likely I'm afraid.

Here in Scandinavia, the dry winter and high indoor temps wreak havoc with stag and bone. As for horn&ivory, don't even talk about it.....
